We're beyond thrilled to have today's guest blogger I'm Not A Cook. What better way to celebrate mom than with a tasty treat that's easy to make?

Mother's Day is just around the corner, and with our hectic modern-day lives, we more often than not just send her a card in the mail and then continue on with our busy schedules.
Take a little time this year to make her something beautiful and sweet to eat. This twist on the classic strawberry shortcake is so quick and easy, making it won't impede on your busy life. You can even prepare this up to a day before serving. See? You can have your cake and eat it too.

StrawberryShortcake

Ingredients:
- 1 pound strawberries
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 18 ladyfingers

1. Prepare the strawberries. Wash and pat dry with a towel. Core and slice half of the strawberries into thin slices lengthwise (about 1/8 inch thickness). Cut the rest of the strawberries in half lengthwise.
2. Make the whipped cream. In a large bowl, beat the heavy whipping cream until soft peaks just start to form. Add in the powdered sugar and vanilla extract; continue beating until stiff peaks form. Do not over-beat.
3. Assemble the cake. Using the whipped cream as a "glue," spread the bottoms of six ladyfingers with a dollop of cream each and arrange them, sides adjacent, onto the serving platter. Spread 1/3 of the whipped cream over this bottom layer of ladyfingers, then evenly place a layer of the thinly sliced strawberries over the cream. Build a second layer by "gluing" six more ladyfingers down, topped with another layer of cream and strawberries. Place the rest of the ladyfingers and cream to make the top layer, and finish off using the halved strawberries.
4. Refrigerate until ready to serve. 
5. Wasn't that easy? Now go eat!

* Prepare several hours before serving: ladyfingers will absorb moisture from the cream and have a lighter texture.
* Be careful not to over-beat the whipped cream. Otherwise, it will become lumpy and stiff.
* Feel free to double (or triple!) this recipe. Since ladyfingers are being used as the cake, you can build it as tall, wide, or high as you like!

Gardening is a good way to provide fresh, healthy, vegetables for your family while saving money. Gardening provides plenty of physical activity, not to mention it's fun way to spend time with your family too! Aside from being one of our favorite Summer activities, growing your own vegetables is an easy way to avoid pesticides and insure produce is picked and eaten at peak of quality.

Here are some tips for starting a garden.

1.  Plan your garden on paper before you plant.

2.  Select a gardening site that is in full sun for at least 8 hours a day, that is level, well-drained and close to a water source.

3.  For best results have your soil tested before planting. You can take your soil to a local Cooperative Extension office for free testing in most areas.

4.  Read package instructions before planting and plant according to directions.

5.  Choose crops that grow well in your climate.

6.  Mark your plants/seeds by rows after planting.

We garden organically with no pesticides. The first year of a garden typically costs a bit more out of pocket, yet by our second year we were able to invest in tomato cages. This year we were lucky to borrow a rototiller from our neighbor, so any cost came from buying plants and seeds. We live on a wooded lot with deer and other pesky rodents so we did have to invest in deer and rodent repellent in order to protect our produce.

Think outside of the box when it comes to expenses. There are many natural alternatives to using pesticides that are better for you and frugal too! To rid your plants of unwanted bugs mix together liquid dish soap and water in a bottle and spray it on your plants. Another tip is to use coupons, and shop Garden Stores through Ebates.
